Warm Berry Coulis French Toast with Honey Coconut Whipped Cream

Takes 30 min; Feeds 4

Ingredients & Method for Honey Coconut Whipped Cream

  • 1 cup Shamrock Farms heavy whipping cream
  • 2 tbsp confectioners sugar
  • 1 tbsp honey
  • 1/4 cup coconut cream
  • 1/4 tsp coconut extract

In a mixer fitted with the whisk attachment, add heavy whipping cream and coconut cream and whisk on low.  Gradually increase speed to medium and add in honey, confectioners sugar and coconut extract.  

Keep the mixer on medium high for about 2 minutes or until stiff peaks form.  

Refrigerate until French Toast is done.

Ingredients for Warm Berry Coulis

  • 1 cup (~6oz) fresh raspberries
  • 1 cup fresh blackberries
  • 2 cups fresh strawberries, hulled
  • 1/4 cup fresh orange juice
  • Juice of half a lemon
  • 1/4 cup white sugar

Ingredients for French Toast

  • 8 slices brioche bread
  • 1/2 cup Shamrock Farms heavy whipping cream
  • 1 cup whole milk
  • 3 eggs
  • 1 tsp vanilla
  • 1 tbsp white sugar
  • Pinch of salt
  • Butter
  • Optional garnishes – honey comb, confectioners sugar, fresh berries, mint leaves

Method for Coulis & French Toast

Make the coulis first…

In a sauce pot combine berries, orange juice, lemon juice and sugar.  Bring this to a boil and allow berries to macerate.

Once sugar is dissolved, remove from heat and (very carefully) blend this mixture until no lumps remain.  I used an immersion blender.  

Pour fruit mixture through a fine mesh sieve to get rid of all the seeds.  

Return the seed free coulis back to the warm pot and keep on low to reduce while you make the rest.

To make the French Toast batter whisk together milk, 1/2 cup heavy whipping cream, eggs, sugar, salt and vanilla until you have a homogenous batter.

Heat a large nonstick pan to medium and add about 1 tbsp butter.  Once butter is sizzling it’s time to get your bread ready.

Working in batches (and making sure to add more butter to the pan for each new piece) dip the brioche in the batter coating both sides.  Allow excess to drip off.

Add bread to pan and fry until golden on both sides ~ 2-3 min.  

Plate your toast.  Drizzle with warm coulis and top with dollops of whipped cream.  

Add optional garnishes as you like and enjoy!
