Truffle Egg Toast

Ingredients for Truffle Egg Toast

  • 2 slices good, crusty bread – here’s one of my recipes if you feel like baking for 8 hours;)
  • 4 eggs
  • 2 tsp good truffle oil
  • 1 tbsp salted butter, divided
  • 1 tbsp good olive oil
  • 1 tbsp heavy whipping cream
  • 1/2 tsp garlic powder
  • 1/3 cup freshly grated gruyere
  • 2 scallions, diced
  • Black pepper and salt to taste
  • Sweet tomatoes, flaky sea salt and micro arugula for garnish

Method

Heat a sauté pan over medium with 1 tbsp olive oil.

In a small bowl whisk together eggs, heavy whip, truffle oil and a pinch of salt until homogenous.

Turn the heat down to medium low and add egg mixture. This needs to be stirred constantly. It will require a small amount of patience, as the gooey, almost wet, eggy texture is what you are looking for.

After about 3 minutes add gruyere cheese, garlic powder and pepper, continuing to stir.

Toast your bread and butter one side of each slice.

The eggs are done after about 6-7 min. Divide them between the toasts and top with scallions, arugula, tomatoes and flaked sea salt.
