Surprise Grilled Halibut with Hatch Chili Butter

Vegetable medley, soup du jour, cowboy casserole, chicken supreme, tuna surprise…All moderately terrifying terms. Unknown, unwanted ingredients strewn together in an aimless combination destined for guttural warfare. Get it? Yuck.

I can’t. I won’t. I beg of you. Think of the children. Do not do it!

Why these anarchic culinary swindlers exist is beyond my gastrointestinal comprehension. These terms virtually scream ‘campylobacter’.

So I put together a little something that doesn’t make anyone quiver in disgust and distrust.

Thrown together – a super easy, (and unbeknownst to your alimentary canal) halibut supreme indeed.

Feeds 3-4; Takes a surprising 30 minutes

Ingredients and Method for Hatch Chili Butter

  • 1/2 Hatch chili; halved (deseeded if you prefer less heat)
  • 1 Meyer lemon, halved
  • 1 handful fresh basil (leaves and stems)
  • 1 handful fresh parsley ” “
  • 1/3 cup good olive oil
  • 1/2 stick salted butter
  • 2 garlic cloves, peeled and smashed

In a small sauce pot, over medium low heat add oil and butter. Whisk.

Add juice of lemon and throw the whole thing in there. Add all the rest of the ingredients and bring to a slow simmer. Turn heat down to low and whisk occasionally for 20-30 min. Then strain.

Hatch Chili Butter

(In this time you will make your delicious grilled fish and veggies).

Ingredients and Method for Halibut, Green Beans and Tomatoes

  • 3-4 Halibut fillets (cut approx 3 inches thick) ~ 6oz each
  • 1lb fresh green beans
  • 8oz fresh cherry tomatoes
  • 2 tbsp garlic powder, divided
  • 1 tbsp ground black pepper, divided
  • Juice of 1 lemon, halved
  • Good live oil
  • Maldon sea salt

Light your grill to medium high heat.

Crimp the edges of a large sheet of heavy duty aluminum foil and drizzle on a generous amount of olive oil.

In a large bowl pour on a bit of olive oil and half of the garlic powder and black pepper. Also add a heavy pinch of salt. Mix this together and line out on foil in an even layer. (If the beans are piled on top of each other they will steam – and we want char).

Using the same bowl add the halibut fillets and add juice of one half of the lemon. Now season the fillets the same way as you did the beans, ensuring they are covered in spices.

One one side of the grill place the beans on foil and cook for 10 minutes, stirring occasionally. Now you can toss on the tomatoes and another pinch of salt.

After this time, add the halibut directly to the grill grate and turn the heat to medium. When they are placed on the grill brush the tops with a bit of the hatch butter. After approx 4-5 min, flip and baste the other side.

Do not flip the fish again. Allow to cook for another 5-7min.

Remove the fish and veggies and serve with extra hatch butter.

So simple and healthy. And surprisingly delish!
