Strawberries with Whipped Ricotta and Pistachios

The scariest moments in life are those when your toddler is nearing sleep in the car. I can’t tell you the kind of crazed ‘momness’ that comes out a person fearing for their life (I.E. a mother whose day is sabotaged by a cat nap). Screaming songs and fist bumping the roof are first on the list (and I’m not even talking about the child). Offering up favorite snacks or buzz words like “agua park” or “popsicles” might get you by for a few, hazy minutes. But those lids don’t quit. They blink heavier and heavier…even in the depths of baby shark blaring on repeat. *Mind you, driving a motorized vehicle at the speed of light while attempting to prevent your child’s suspended consciousness is not recommended.

I understand you may think I’m being dramatic, but what you might not realize is that your toddler (even if you don’t have one yet) is the non-altruistic, dictator of your every second…Unless it’s nap time. So, at nap time – Allll of the daily necessities of life have to happen:

Dishes, running, showering, writing, cooking, eating, photoing, videoing, editing, fumbling, redoing, petting the blog dogs, snacking, attempting to have conversations with anyone around, scheduling, refining, relaxing?

Thankfully, I have a toddler who enjoys vacuuming and laundry. But you get the gist, right? Time is of the utter, unadulterated essence. Speaking of adults (I miss you!)…

Feeds 2 plus your toddler (when she wakes); Takes less than 15 min

Ingredients for the Strawberries with Whipped Ricotta & Pistachios

  • 12-15 strawberries, halved (or quartered depending on size)
  • 10-12oz full fat ricotta cheese
  • 2 heaping tbsp crème fraîche
  • 2 tsp white sugar + more for garnish
  • 2 sprigs tarragon, minced
  • 2 sprigs thyme, minced
  • Approx 20 salted pistachios, chopped
  • Avocado oil
  • Fennel fronds for garnish (optional)
  • Served with toasted bread

Method

Sauté strawberries over medium low heat, in about 1 tbsp avocado oil for 6-7min until fragrant and very soft. Add herbs and turn off the heat.

Meanwhile, whisk créme fraîche, ricotta and sugar together until well incorporated.

Plate the cheese mixture and top with strawberries in juice.

Garnish with pistachios, extra tarragon, fennel fronds (if using) and a pinch of sugar. Serve with buttery, toast.
