Shark Cuterie

Not sure if you know this, but I have a little “thing” for sharks. Love em’. Wanna dive (in a cage with proper safety measures) with em’. DO NOT wanna eat em’. And more certainly DO NOT wanna be eaten by em’.

I host a ‘shark week’ party every year. We throw only the most aquarian of festivities including seal pup marshmallows, a bloody people bar equip with Cuban rafts and chum in the water salsa*. We take shots every time a Great White breaches. And the main attraction? Well, that of course is the charcuterie board.

This particular board has nothing to do with sharks. Except for the fact that everything has everything to do with sharks, always. But that aside. This was not THE shark board. It did, however, have some meats, cheeses and other things on it that sharks find delicious, no doubt.

We put the Shark in charcuterie. Eat up.

In the event you need a charcuterie board for another gathering (i.e. superbowl party, new years eve get together, meeting the inlaws, etc.) this will also do the trick.

Feeds you and your frenzy; Takes a couple minutes

Ingredients and Method

  • Bunches of crisp, green grapes
  • 10-12 pineberries
  • 10-15 strawberries
  • 10-15 slices speck ham (or prosciutto)
  • 30-35 slices hard salami
  • Camembert cheese, cut in half
  • Cotija cheese, broken into big chunks
  • Locatelli cheese
  • 2 large handfuls of macadamia nuts
  • 1 seedless cucumber, sliced
  • 1 small block aged white cheddar
  • Various crackers or sliced bread
  • 1/3 cup good raw honey
  • 1 large handful castelvetrano olives

Cluster all the ingredients in small groups on a large cutting board. Lay the speck out in twists for variety. Place honey in a small bowl. Serve with cheese knives and small plates.
