If you remember these you will have the power to make any celebratory poolside extravaganza an event dreams are made of.

Imagine this:

The late summer sun is scorching. Babes in bikinis clinging to oversize llama floaties catch a hydrating sip from their koozie or Watermelon-Blueberry, Tarragon Mojito or Mummy’s Mummosa. Suddenly – a giant splash, as Glob the blog dog flies off the side to catch his prized frisbee. Alfresco dinner soirées rumba gently in the intoxicating twilight. Friends laugh jovially in between the paradox of pool and beer bubbles.

The refreshment table is set. AND THEN . A scent so amazing the period from the prior sentence took a pause itself. A smell so robustly electrifying, the very lights flicker in sheer bewilderment. An aroma so adrenalizing the adrenal glands themselves halt all hormone production. Do you need me to continue?

Stopped dead in my tracks by this olfaction traction. What could be this odoriferous mystification??

It’s the glaze, guys. I am not kidding you. Party on, grill masters.

Ingredients for Party Wings with Strawberry Viognier Glaze

  • 1/3 cup strawberry jam
  • 4 tbsp ketchup
  • 3 dashes Worchestershire
  • 1 1/2 tsp garlic powder
  • 2 tbsp viognier wine (you could also use a dry riesling)
  • 1 tbsp apple cider vinegar
  • 2 tsp Louisiana hot sauce
  • 4 tbsp water
  • 3lbs party wings (wings and legs), approx. 25-30
  • 3 scallions, diced
  • Salt, pepper and EVOO

Method

For best results – marinate the chicken overnight in avocado oil, lots of salt and pepper, in the fridge.

Make the glaze by combining the first 6 ingredients in a sauce pot and whisking until incorporated. This will be thick.

Add the water and whisk again to get the consistency of a syrup. Add hot sauce and taste. Add salt and pepper as desired. Once you get it perfect – pour half of the glaze into a bowl and set aside. Let the rest hang out on very low heat.

Turn on your grill to high.

Lay out all your party wings and pat dry with a paper towel. Drizzle with fresh olive oil and a bit of salt and then brush them liberally with the glaze in the bowl.

Turn the grill down to medium and start grilling all your chicken.

Because there is sugar in the glaze, the outside will start to char, so you need to flip these beauties more frequently (usually about every 2-3 min). I like to re-baste them with more glaze from the bowl about half way through. They will take roughly 20 min total grill time.

Once done, serve with the reserved warm glaze on the stove – don’t use the stuff from the bowl now that it is contaminated.

Sprinkle with scallions and catch some summer rays!
