Miso and Roasted Garlic Broccoli Cheddar Soup

Takes 35 min; Serves 4

Ingredients for Miso & Roasted Garlic Broccoli Cheddar Soup

  • 1 large head broccoli, cut into small florets, stems discarded (or saved for snacking)
  • 1 head of roasted garlic* see note for below on how to do this
  • 1 large Russet potato, diced small
  • 1 heaping tbsp white miso paste (and I mean heaping)
  • 2 tbsp salted butter
  • 2 cups cheddar cheese, shredded
  • 3 cups chicken stock (or vegetable)
  • 1 cup heavy whipping cream
  • 1/2 tbsp onion powder
  • 2 tbsp flour
  • 3 tbsp parm, shaved
  • 1/2 cup sauv blanc (such as the one your drinking)
  • 4 bread bowls; I used sourdough boules, inside bread roughly removed, taking care not to rip the bottom (makes for a sad soup bowl)
  • EVOO, salt and pepper

Method

In a dutch oven, heat 2 tbsp olive oil and 2 tbsp butter over medium. Sauté potato with a good bit of salt, the onion powder and miso paste. Stir this often with a wooden spoon, breaking up the miso and the potatoes.

Once potatoes start to get soft (~12-15 minutes), squeeze in the roasted garlic.* (I make a big bunch ahead of time and have it on hand for all kinds of things. Simply cut the tops off of your garlic heads, place on a large piece of foil, drizzle with olive oil and a little salt. Crimp the foil up so they are covered. Bake at 375F for 1 hr.) I use one whole head for this soup.

Next, add the flour and mix until it is all incorporated. Smash the potatoes as you go, which thickens the soup.

Now, have a sip of wine. Now, add the wine.

In goes the broccoli and stock. Bring this to a boil and then turn down to simmer. Let this cook 15 minutes, crushing and stirring until thickened.

Finally, add cheese and cream, allowing this to fully melt.

Serve in a bread bowl. Garnish with parm and parsley or something green – for health.
