Mango and Halloumi Salad with Honey Balsamic Cherries

Takes 20 min; Feeds 4 hungry salad lovers

Ingredients for Mango and Halloumi Salad with Honey Balsamic Cherries:

  • 1 large mango, cubed small
  • 1 head kale, chopped, fibrous spines removed
  • 10 oz halloumi cheese, sliced
  • 1 lemon, halved
  • 1 tsp red pepper flakes
  • 1 ball burrata cheese
  • Small handful basil leaves
  • 15-18 fresh cherries, pitted, halved
  • 2 tbsp good balsamic vinegar
  • 1 tbsp your fav local honey
  • 1/3 cup good olive oil + more
  • 10 slices baguette bread
  • Salt

Method

Preheat oven to 400F and brush your baguette slices with olive oil and a bit of salt. Bake for 7-8 min until golden. Remove.

Meanwhile, sauté cherries over medium heat with balsamic, 1/3 cup olive oil, honey and a pinch of salt until tender ~ 10-ish minutes. Stir this often then remove from heat.

In another large, nonstick frying pan, place your slices of halloumi and fry over medium high heat until golden on both sides (3 min per side should do the trick). You can opt to use a bit of olive oil in the pan if needed.

Let’s assemble the salad:

I like to first lay out the big pieces of kale. Then top with mango cubes, warm halloumi slices, basil leaves and torn burrata. Juice the lemon over everything and sprinkle with some salt.

Finally, drizzle on the cherries and red pepper flakes. Serve with toasted bread.
