Lemon Butter Lobster Rolls

When you go to Costco, I assume you go hungry. One of my favorite past times is going to bulk grocers, (alone) stocking up on bushels of wine, blocks of cheese and other essentials – and then eating the entire rotisserie chicken in the car – all to myself. I even bust out pandemic sized stockpiles of paper towels for this exact celebration.

A warm and moist, yet satisfyingly salty and crispy skinned bird = a drumstick dripping down my face, onto the center console…in pure silence; pure heaven.

I’ve noticed people watching me. They shield children’s eyes as they hustle by. I can appreciate their…enthusiasm. It’s a lot to take in. Jealousy is obviously warranted. And today, I stocked up on something equally as delicious and messy…lobster tails.

Ingredients & Method for Herby Mayo

  • 3/4 cup good mayo
  • 1/3 cup sour cream
  • 1 tbsp fresh dill, minced
  • 1 tbsp fresh tarragon, minced
  • 2 tbsp chives, cut small + extra for garnish
  • 2 celery sticks, halved lengthwise and then diced, leaves reserved for garnish
  • Zest & juice of half a lemon
  • Salt

Mix together the first 7 ingredients until well incorporated. Taste and add salt to your liking. Cover and refrigerate immediately.

  • 2/3 stick salted butter, at room temp
  • Zest & juice of 1 lemon
  • Salt
  • 5-6 Butter or Kaiser rolls
  • More salted butter for your rolls
  • 4-5 lobster tails, cut lengthwise through the shell to the tail, skewered so they don’t curl on the grill

Light your grill to medium high heat.

In a small food processor, slowly cream together the butter, zest and salt. Add in a gentle stream of lemon juice and continue mixing. Once combined, divide in 2 separate bowls and set aside.

Use one bowl of the butter with a brush to baste the lobster (both sides).

Turn heat down to medium and cook shell side down for 7-8 min. Baste again and then flip to the other side, cooking for another 5-6 min, until flesh is cooked through. Remove from grill and allow to cool for a few minutes. At this time butter your rolls and grill for 30 seconds, inside down for a nice little char mark.

Once cooled, pull the meat out of the shells and chop it into large chunks. Add the meat to your bowl of herby mayo and mix. Plop the lobster in heaping spoonfuls into the toasty rolls. Dip these bad boys into that extra bowl of lemon butter you have.

Top with celery leaves and extra chives if desired.

You can enjoy these poolside, with friends, or even in the Costco parking lot. In any capacity, they will be divine.
