Grilled Chicken Salad with Blackberry Basil Vinaigrette

Ingredients and Method for Blackberry Basil Vinaigrette

  • 3/4 cup sweet blackberries
  • Handful basil leaves and stems
  • 1 tbsp good balsamic vinegar
  • 1/4 cup good olive oil
  • 1 clove garlic
  • Pinch salt

Blend all ingredients except salt together in a small food processor until no large lumps remain.

Taste and add salt. Blend again.

Pour mixture through a fine mesh sieve (to get rid of all the blackberry seeds) and refrigerate until ready to dress salad.

Ingredients and Method for Grilled Chicken Salad

  • 3 large chicken breasts, pounded
  • Juice of 2 lemons
  • 1/2 cup blackberries, halved + more
  • 1/2 cup strawberries, halved + more
  • 1 avocado, sliced
  • 4-6 large handfuls mixed greens
  • About 14-16 slices gruyere cheese
  • Olive oil, salt, pepper

If time permits marinate the chicken (2-4 hours) in the lemon juice, 1 tbsp salt and 2 tbsp olive oil. If not, mix chicken with those ingredients well and light your grill to high.

Once grill is hot, turn heat down to medium and add chicken breasts. Depending on thickness they should take about 6-8 min per side. Remove and let rest under foil while you assemble the salad.

In a large bowl add your greens, berries, gruyere and some of the blackberry basil vinaigrette. Mix well.

Slice chicken.

Top with avocado, chicken, more berries, salt, pepper and more vinaigrette.
