Coy, Slow, Roasted Salmon

Koi fish are disgusting.  They are by far the worst fish.  I’ve always thought so.  A gussy’ed up catfish all too good at mocking the adoring tourist.  Slimy and slithery, they are most incriminable – the used car sales men of the sea. 

Seeing them clamor fiendishly for crumb after crumb in their murky cesspool backlit domicile, tucked away in a 1990’s-esque nail boutique – I wondered what the enamor really was?  Gold, white and orange glimmers fade eerily through a turbid glass window. Rubber vegetation adorn the tank. 

Naked Buddha’s and real (moderately rotten) papayas lay underneath as if guarding this makeshift vermin palace. 

Flicks of the tail and gobbles of the mouth.  They act like they’re starving.  Maybe they are. 

Which brings me quickly to another point.  I too, am hungry.  And not unlike my bottom dwelling foes I dream of a larger body of water, filled to the foaming brim with sea sweets that will nourish my grumbling belly..

Salmon.  The martyr of the sea.  They live and spawn only to die for their cherished eggy legacy’s.  

That’s what I’m having.  Later rabid sea pests.  

Feeds 4-5; Takes 50 min

Ingredients for Slow & Low Roasted Salmon

  • 1 large salmon filet left whole ~ 2lb
  • 1/2 orange sliced
  • 1 lime, juiced
  • 1 lime, sliced
  • 1 lemon, juiced
  • 1 large handful castelvetrano olives (I sliced some and left some whole, but be mindful of pits)
  • 4 sprigs fresh tarragon
  • Extra virgin olive oil
  • Maldon sea salt

Method

Pre heat oven to 250F.

Season the bottom of your baking dish with glugs of EVOO and salt.

Place the salmon skin side down on the dish. Season the flesh side of the fish with more EVOO and a heavy hand of salt (about a tbsp).

Top the fish with citrus slices, olives and tarragon.

Bake, uncovered for 45 min. After this time, the fish may look undercooked – It is not.

Remove and Serve immediately.
