Coconut Banana Bread French Toast

The feeble cashew nut is the worst of all the nuts by far. I know I have grasped some unexpected attention at this notion, but it, by all texturosifical, scientistical and tastebudoligical standards, is a fact.

I’m not completely against it, as I find cashew milk to be satisfactory from time to time. But when in a line up, I’m choosing: hazel, wally, al, pea (can and nut), and mac over cash every time.

All of the latter aforementioned nuts are interesting, vibrant and versatile. Pistachio ice cream? Come on. Tagliatelle with Sun Dried Tomato Pesto, Toasted Hazelnuts and Burrata? The stuff dreams are made of. How about Sourdough Stuffing with Pancetta, Chestnuts and Celery Sofrito? Droool. I should go on. But I’ll just leave you with this:

Makes 2 loaves, Takes 60 min

Ingredients for Coconut Banana Bread French Toast

  • 5 ripe bananas + more for garnish
  • 4 eggs
  • 1 1/2 cups white sugar
  • 3 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 2 1/2 tsp baking soda
  • 1/4 tsp salt
  • A few dashes of vanilla
  • 1/2 cup full fat Greek yogurt – I use Fage Total
  • 1/2 can coconut milk
  • Unsweetened coconut flakes
  • 1/2 cup chopped pecans (totally optional)
  • Powdered sugar and syrup for garnish
  • Salted butter

Method

Preheat oven to 350F (use convection if possible). Grease 2 loaf pans.

In a large bowl, mix and smash 5 bananas with eggs and vanilla. Once mixed, add yogurt and coconut milk and whisk.

In a separate bowl mix together the sugar, flour, baking soda & powder and salt. And then add the dry ingredients into the wet, mixing along the way until gloppy but incorporated.

If your using pecans, add them now and mix in.

Pour the batter into the two loaf pans and bake uncovered for 50 minutes, making sure to turn them 2x if you don’t have a convection oven.

Once done, allow to cool, then cut thick slices.

Heat a large pat of butter in frying pan and fry each side of the banana bread until golden. This takes about 2 min per side. Top this with banana slices, powdered sugar, coconut flakes and syrup.
