Campfire Double Butter Bourbon ‘French Toast’

My sister-in-law, Apples, hates french toast. Her nickname is Apples, in case that was too many food-isms in one.

I’m mostly not sure what to do about it either.

Bread steeped in the confines of an eggy, sacchariferous bath. Cinnamon, sugar and vanilla tango in a nostril orgy of breakfast infiltrates.

Look, I know we all have our own obstacles. I for one, have a HUGE problem with chicken salad….See my tangential post about that here

But I don’t know how one could ever scour at the French…or for that matter, at toast! Those are physically the best things in the world.

The French; with their insatiable livers, buttery pastry and long lives…

And toast; with its ability to hold any assortment of cheeses or jams or spreads or meats or (shall I go on?)

So anyway, in my obvious need to convert her, I’ve tried something new, far off the grid – in campground format; Where an open fire lights the cast iron into an enticing abyss.

No control issues here…

Feeds 2; Takes 20 min (once your fire is roaring hot:)

Ingredients for Campfire Double Butter ‘French’ Toast with Bourbon Syrup:

  • 4 thick slices sourdough bread
  • 4 eggs
  • 1 tsp cinnamon, ground
  • 1 tbsp brown sugar
  • 1 cup 1/2 and 1/2
  • 1/2 cup fresh raspberries
  • 1 glug good bourbon
  • 1/3 cup good quality maple syrup, warmed
  • 2 tbsp butter

Method:

Heat cast iron skillet on a grill grate directly over campfire flames.

Make the custard; combine eggs, sugar, cinnamon and half and half in a large bowl and mix well.

While pan is heating, soak bread slices in this mixture, flipping once to coat both sides.

Once hot, add butter until melted and then lightly browned (about 1 min).

Near the heat, warm maple syrup and glug of bourbon.

Add bread to cast iron pan (not overlaying or overcrowding) and cook on first side for 7-8 minutes. Flip and cook for 5 more min.

Top the toasts with almond butter, raspberries and maple bourbon syrup.

If this doesn’t work, I might just need to douse myself in a big ole glass of bourbon.
