Building Steak Lettuce Wraps (with Mango Gooseberry Guac)

“If we build it they will come”??  Well I’ve been wandering about them

First of all, who are ‘they’?  Secondly, and decidedly more important, do WE want them to come?  I mean, are they invited?  Do we like them?  Do we even know them? 

Perhaps we are building this for ourselves!  Maybe it’s a fortress, a private entity, perched among an elite few, perfectly uninterested in the event of more gathering at the perplexity of the precipice.  Packed in like sardines. No thanks. I’m not so sure I want them there..well here

I’m not trying to be indignant, nor do I bask in the notion of solidarity.  I just have a few questions about why…If we are building something..do ‘they’ show up after it’s already built.  Moochers.  Scavengers.  Dirty rotten scoundrels. 

I’m sorry, what? What’s that you say?…They have wine? THEY have WINE!

Now, my stoically guarded exterior boasts an eyebrow of interest.  They brought multiple bottles??  These people must know me.  And what a welcome sight!  I’ve been building for so long.  Muscles are overworked, worn. CK is elevated. Rhabdomyolysis is nearing…

Think again! It’s happy hour!  Sit down, I’m glad you came by. 

I’m serving Steak Lettuce Wraps with Mango Gooseberry Guac…and it looks like you’re serving the wine…

Serves all of you; Takes as little as 20 minutes or as long as there’s wine

Ingredients:

  • 1 large head butter lettuce, washed and separated into cups
  • 3-4 steak filets
  • 2 ripe avocados, cubed
  • 1/2 cup gooseberries, rinsed and halved
  • 2 clamshell mangos, cubed
  • 1/2 cup red cherry tomatoes, halved
  • 1/3 large heirloom tomato, cut into cubes
  • 1/3 red onion, diced
  • Small handful cilantro leaves, chopped
  • 2 scallions, diced
  • 2-3 easter egg radishes, sliced (optional)
  • Juice of 1 lime
  • Salt

Method

Preheat oven to 400F degrees. Also preheat a grill pan with a good glug of olive oil in it until hot. Turn down heat to medium high.

Season the filets with olive oil and liberally salt. Sear on all sides (approx. 1 min) and then move pan to oven to cook for 7 minutes. Remove steaks and let rest under foil for at least 10 min. This will yield a medium rare temperature. Slice. Taste. Repeat. Try to remember to save some for the guests.

In a medium bowl, let’s make the ‘guac’. Mix together the avocado, mango, gooseberries, tomatoes, onions, and cilantro. Season to taste with salt and add lime juice to your liking. Mix, but leave chunky. You can opt to refrigerate this for a few hours if you are prepping the steak later.

Meanwhile, prepare a large serving platter with the lettuce cups. Fill the cups with guac and steak slices. Garnish with radish and additional lime.

After all the more the merrier, right! But, who are these ‘more’?? Does it really matter if they come bearing gifts? 😉
