A Breakfast Sandwich Nightmare

Last night I awoke to someone in my bedroom stabbing a knife into my side. It was 02:32 and the moon was bright. I could make out an indistinct, hairline image of a tall, sturdy male silhouette…I didn’t care too much though, as I was more concerned about my certain evisceration and massive gastrointestinal trauma.

I screamed, and naturally awoke. Glob the Blog Dog raised his head in callous annoyance. No man. No blood. No bowels strewn about. But the burning affliction remained. Was I dying? (Was I overdramatic?)

Hunger pangs of shear grandeur.

I am plagued by food. This happens a lot. I wake up musing (or rather) nightmar-ing because…I’m ravenous. In an inefficient effort to get back to sleep, I tossed and turned like the over-medium eggs that flopped about my restless mind.

Several hours later, coffee cup in hand, I had the cure for my ailing famishment…Thank God. I’m alive. And breakfast is served.

Feeds 2; Takes 8-10 min

Ingredients for Breakfast Sammy

  • 4 halved slices of thick, sourdough bread
  • 2 small heirloom tomatoes, sliced
  • 2 sunny side up eggs
  • 1/3 cup grated smoked gouda
  • 1 tbsp butter
  • 3 chives, chopped
  • Avocado oil, salt, pepper
  • Hot sauce (optional, I used Louisiana Hot Sauce)

Method:

Preheat oven to 450 degrees.

Toast the sourdough in a toaster to nearly desired doneness and then spread butter on one side of each slice.

On two slices, top with grated cheese and place in oven on center rack to melt.

Meanwhile heat avocado oil in a nonstick skillet. Once hot, turn heat to medium and add eggs. Season with salt and pepper.

After 4-5 minutes remove cheesy bread from oven and top with eggs, tomatoes, chives and hot sauce.

I’ve lived to see (and eat) another day.
