Cheddar & Scallion Heartthrob Biscuits

Use your hands for baking delicious biscuits instead…(and not having to share with anyone unappreciative.)

Takes 30 min; Feeds 8, if you only eat 1 biscuit

Ingredients for White Cheddar & Scallion Biscuits

  • 2 cups all purpose flour + more
  • 1/2-2/3 cup half and half
  • 1/3 cup full fat greek yogurt, such as Fage
  • 1/2 cup salted butter, cold, diced
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 scallions, diced
  • 1 cup grated, sharp white cheddar cheese
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp white sugar

Method

Preheat oven to 425F.

In a KitchenAid mixer combine flour, sugar, salt, baking powder and soda, pepper and cubed butter. Mix briefly on medium speed with a hook attachment.

With the mixer on, slowly add the yogurt and the half and half. The batter should be very sticky, hold together.

Add cheddar cheese and scallions and mix just until incorporated. You should still see chunks of butter throughout the batter.

Roll out dough on a floured surface to approximately 1 inch in thickness. Cut out biscuit rounds with a biscuit cutter or the open end of a water glass. Place on a parchment lined sheet tray with space in between each one.

Bake for 20-22min, until golden and fluffy.

Alternatively, these are great with yellow cheddar! You can feel free to omit the scallions too. All kinds of combos work well with this dough.
